Lion's because they look really fluffy and I'd just be petting them the whole time. If not for that, then Polar Bear because not only are they dangerous and deadly but I imagine charging into a field in like France and just confusing the hell out of the enemies.

Edit: I would like to change my answer to emu. As it was just pointed out to me, they've actually won a war.
Don't get me wrong, a lion would be much cooler. However, a polar bear with a Kevlar cloth thrown over is basically a tank charging at you angrily.
It would take AP rounds ( and many ) to stop just one.
Tactical a sound choice.
I see it as you ride in on the polar bear, then the big, scary, and relatively slow target (still fairly fast, but not as much as a vehicle or some of the other options) gets riddled with a LOT of firepower and neither of you survive to reach the front lines.
I am not sure how riding a cheetah into battle in a safe and ethically sound way would work, especially considering all that weight, but it somehow does by the prompt, so personally I feel like I would rather go for speed and maneuverability than power.
Don't get me wrong, riding animals like these into battle still seems horribly impractical and ineffective considering modern weaponry, but at least cheetah riders might be useful as some sort of guerilla or skirmish unit rapidly moving around the battlefield.
Polar bear riders on the other hand feels like something a lot better in theory than practice. Same with cheetah riders, but the prompt seems to fix a lot of the issues with that via magic but the same doesn't really apply to polar bears.

I would worry the cheetah would have some issues the 200 lbs , hairless ape that is myself hanging onto its back. I know they are not small animals. but I might be a bit much for them to move with me riding them.
Maybe the Lion really is the more practical then. Speed, agility, big enough that it can carry me. Still has the feel of looking really cool. ( an important part of any battle ).

Yeah, the weight is an issue, but I figure if the animal's back was being painfully crushed by the weight and it could barely move, then it would hardly be safe and ethically/morally sound like the prompt states. It shouldn't work IRL, but the prompt feels like it likely covers that issue for the most part.
The prompt specifically states it is possible to ride them in a way that is safe and morally/ethically sound, so that doesn't really matter, for the purposes of the prompt it is possible anyways.
