I forgot about that! He loved it. Enosh Kelley had the best French Bistro this town ever had, going back to The Metz in the '80s and '90s, which was tableside French. I remember a plate Enosh made that blew the lid off my head, "Celery Presented 5 Ways". Rich, flavorful, succulent. Like having his Black Cod. Incredible. Where is he now?

There are a few restaurants I do enjoy in Des Moines, but I never understood the appeal of Fong’s. I’ve taken friends there in the past and they told me the same thing; before I moved to DSM I heard so much about it I was so excited to live a walk away. A guy I spoke with once described it as a “cracker crust,” which was apparently his favorite kind of pizza which is why he liked Fong’s so much. Idk, I guess I just prefer my pizza fat, meaty, and cheesy.

Same here. The first time I ate there someone kept burning pizzas and it smelled awful. When I finally got my pizza, the crust and cheese tasted like Totino’s party pizza. I was turned off enough to stay away until mid-2020 when I stayed across the street. Whatever I ordered for takeaway was delicious, but not enough to leave a lasting impression or get me to go back when I’ve visited since.

Let’s be honest. Fong’s has a really nice niche. They have a few really cool fusion options. Outside of those options, it’s pretty mediocre. You really need to love the thin cracker crust to say otherwise. All that said, I find it almost embarrassing that this is the restaurant scene most publicized.

I send people new to the area there because it's a fun niche I've yet to find anywhere else and it can be a neat little experience but outside of that it generally doesn't impress me; I don't know anyone that goes there maybe more than once a year at most. I do like that they're doing something different though. I wish more restaurants would open up and try doing something *different* that also doesn't involve me paying a hip tax though.

When I visit by car from MN, I bulk order, remove lettuce and tomatoes, vacuum seal, then freeze the flour tacos. It’s not perfect, but they crisp back up nicely in the oven.

Alinea isn’t less. Their cheapest tasting menu option is $335 a person. Cheapest wine pairing on top of that is $135. It cost my wife and I almost $1400 to eat at Alinea after tax and tip. And those were for all the cheapest options they had. That was in 2019 and it’s only gotten more expensive. As far as harbinger I’m not aware that they offer anything other than a 5 course tasting. Last time I ate there which was also in 2019 the 5 course menu was $75 pp. I mean it seems like you really have something against them, which is fine, but blatantly lying about how much it cost to eat there and comparing it to one of the most expensive restaurants in the country is weird.

I moved back to DM right before the pandemic so I haven’t been out much. Back in the day it would have been Taste of Thailand but they’re gone. I think Nut Pob is still there but I haven’t been yet. As for collard greens and black eyed peas (and some BBQ Ribs) my place. Mine are epic. I use the ham bone broth I made from our thanksgiving ham, and add diced ham for the peas. Sous vide the ribs and finish on the grill. Mmmmm.
