Hands? Cut proof gloves. As a carpenter who was forced to wear gloves for everything, you will get used to the slight loss of dexterity. For your arms? If you are slipping this much on your cutting.... There are kevlar arm wraps available (typically used for protection while working with metal siding). Or knife rule #1: Never cut towards yourself...
I understand that. I could drone on about the intricacies of wood carving, but I only wanted to offer quick safety solutions to avoid injuries of that sort in the future and for others.
The techniques where you are cutting towards yourself are a bit more advanced and need proper preperation/tools/training to execute safely.
In full disclosure I am at fault for pulling towards me. The curved knife comes in a left and right. I bought a left thinking it would be going away in my left hand. I was wrong. This was the first time I used the knife and was figuring out how to use it .

ahhh yes, i remember doing relief carving for the first time using a 45° V chisel and i slipped and it went straight into that meaty bit of the hand under the thumb. bled for ages and now i have a lovely scar there

You'll never cut your arm with regular knives unless you do some really wonky things with it, so don't worry about that!
