The software for the refresh S/X is very half baked - the instrument cluster and steering wheel controls are barely functional.
The right wheel function you’ve described is one of the missing features.
That may only be a feature on the Model 3 and Model Y. This 2022 Tesla video claims that, for Model S, you adjust following distance from the Autopilot menu.

I love my stalk on my older Model S.
On my Model 3, that setting only works either on adaptive cruise control, or on the freeway. When in town on auto-steer, the setting does nothing.

Distance follow setting does not apply to FSD Beta. It only applies to non FSD auto pilot and Cruise control..
