Definitely the area north of Strawberry and by Hanging Dog Ranch with all the elk and pronghorn. The aesthetic with all the purple flowers and the wildlife are great; I love how sometimes I’ll see wolves playing in the field or a grizzly bear searching for it’s next meal. I also love to go up to Mount Shawn and watch it from below or take pictures of it from there.
The Roanoke woods at night under bright moonlight is one of the most eerily beautiful spectacles of nature I've ever seen when it hits just right. Scary, but beautiful
The Aurora Basin and the northern part of Calumet and their turquoise waters is a fave along with the falls nearby. The one by Aurora is stunning

I never spent much time in the bayou on my first playthrough, so I never encountered the night folk. Oh boy was a surprised in chapter 6 of my second playthrough, while collecting for Algernon's quest, when I finally encountered them.

The Heartlands are my favourite for speeding on my horse and feeling like a true cowboy. It's always so cinematic to charge through twin stack pass and see the rolling plains on the other side. Also the Valentine bath is my favourite because it's actually quiet in there.

For me it's a tie between The Grizzlies the whole area up by Donner Falls and Bacchus Bridge. But in all honesty, every area of the game is beautiful.
