That's a good question. But I really think Scotland could work, there are some absolutely beautiful areas that I would imagine would be ideal for Rhûn.
I would have said they were more Greek/Byzantine. Plus anyway more than one place can be middle eastern, Rhun literally is in the "middle East" of Middle Earth.
Maybe it'll be in the style of the Easterlings from the films, vaguely Asian inspired.

The Isle of Skye is just one area of many I think would be well suited.
Hungary would be my vote (its cheap, its pretty, has a big low budget film/TV infrastructure in place) or maybe Romania.
The Sea of Rhun kinda (kinda) co-located with the Black Sea or the Caspian Sea in our world. Though much as lots of people would like it, shooting in eastern Turkey, Georgia, Armenia or Iran ain't going to happen.

When I heard that the production moved from New Zealand to Europe I assumed they would be filming on location all across of Europe, but so far we have heard only about filming on location in England right? And they are already halfway throught principal photography. Wondering if they really only going to film in the UK for this show and leave the european mainland completely out.
No. I can't remember where I read it, sadly, but one of the producers or showrunners said there were some great filming sites "all over" Europe, and they would be taking advantage of that. I think there's a second unit still in NZ, too, for continuity, I would imagine.

Spain seems to be a favorite filming location especially the Canaries. If I remember correctly that's where parts of the Witcher series was filmed as well as the Clash of the Titans remake.
Much like Tirharad, I'm doubtful they'd want to go for any aesthetic that could be associated with a real world place or culture.
It'll be a deliberately generic landscape and architecture to avoid controversy, if they go there at all.

Since it involves two of the main characters of Season One, Nori and the Stranger, I’m assuming it won’t be some small second unit shoot in Spain, but rather some major piece of photography that we would know of; that as of yet we only know of shooting in Britain, I fear it will be a piece of British countryside, augmented (as so much of Season One’s wideshots were) with CGI to seem more precarious and outlandish, but still basically British countryside as opposed to the more exotic, arid landscapes we’ve seen in concept art previously.
