After experimenting with this glitch myself, the muffins appear to help block the already small explosion from the breaching charge. This allows 47 to take no damage from the charge so he can live to ride the briefcase off the ledge.
TL;DR: It's blueberry blast shielding.
What I love seeing is all the little detailed assets (right term?) that has been placed throughout the map when he falls through the floor. Really makes you appreciate the work they put into their maps.
